What is organic food?
Organic farming is defined as farming without the addition of synthetic chemistry for plant protection or for fertilizers, with respect for animals and the environment.
It is an agriculture which favors natural fertilizers, biodiversity. Organic labels have developed in recent years, sometimes with some abuse; moreover, the value of the organic label is different depending on the country… Indeed, there are several organic labels: French, European and international labels. The nutritional differences
Foods from organic agriculture (AB) are not richer in nutrients than those from conventional agriculture (CA).
AB fruits sometimes contain more antioxidants but less carotenoids (carotenoids are provitamins A and some have anti-cancer and antioxidant activities. They stimulate the synthesis of antibodies).
Organic vegetables are sometimes less rich in nitrates but they do not allow, without selection, preparation and control, to respect the very strict regulations of “small pots”.
